I have to be honest with you, I’m not a chef. I’m a cook, meaning everyday I try to provide a healthy meal for my family that doesn’t involve dinner in a box. However, we are all busy. All too often, something comes up at the last minute, and the fabulous dinner you cooked up in your head turns into yet another spaghetti night. Bo-ring.
But beyond being boring, slapdash meals are also (by and large) much less healthy than something you’ve taken more time and care to prepare. And that’s certainly not a message I want to be sending when I’m working so hard to help my kids form healthy habits that will stay with them for the rest of their lives!
So when Del Monte Foods invited me to try their Chef’s Pantry Meal Toppers – a brand-new way to “make over your meal” in just minutes, with a variety of veggies in savory sauces – I knew I’d be hooked.
Here’s how it works: all you need is chicken and rice (or any other protein and starch combination). Then, just heat the Chef’s Pantry Meal Topper in a skillet or microwave, and you’ve got a delicious dinner for four – with a whopping three servings of garden-quality veggies. I just made the Southwest Beans and Corn dish the other night and it was a hit!
