Easy Chicken Teriyaki Recipe

On my typical day I only get about 45 minutes to cook dinner, and that’s from the time I got home from picking up my son at the after school care sitter until dinner time at 6 pm.  On top of that, I have to help my son with his homework while cooking dinner, not mentioning I have to leave again to pick up my youngest from the daycare if my husband has to work late.  Having said that, cooking something that’s easy and quick is very important to me.

For dinner tonight I made Chicken Teriyaki, a super easy and super yummy chicken dish recipe that I got from Rasa Malaysia, my number one resource for Asian recipes.  I had to make a few modification because the recipe says I need to use boneless skin on chicken thigh.  Well, I don’t know about you but I have never seen boneless skin on chicken.  Usually it’s either boneless skinless chicken thigh or bone in skin on chicken.  The key to this recipe is pan frying the chicken so that the skin is nice and crispy.  Bone-in chicken takes longer to cook than boneless, so here’s my modification:

  • Preheat the oven for 350 degrees
  • Meanwhile, season 4 pieces of chicken thighs (bone in and skin on) with salt and pepper, put them on an oven pan with aluminum foil
  • Bake the chicken for about 20 minutes one side
  • While waiting for the chicken to cook, prepare for the teriyaki sauce
  • After 20 minute, flip the chicken to the other side and bake for another 20 minute
  • When the sauce is done, transfer to a separate bowl.  I like to separate the chicken from the sauce because you can reheat the leftover chicken in a toaster oven to get the same crispiness.  If you mix them, the sauce will get burned when you reheat it
  • Once the chicken is half baked, take it out of the oven and begin the pan frying process.  Flip the chicken to make sure it’s well cooked.  Pan fry until it’s no longer pink
  • Pour teriyaki sauce over the chicken and serve with hot steamed rice
  • Enjoy
