Recipe for Toddler: Potato Balls

We Indonesians love fried food.  Actually most of our meals are deep fried.  Two of my favorite Indonesian food are “perkedel” (translation: potato fritters) and potato croquettes, which is actually a potato fritters but you roll it in a bread crumb and deep fry it.  We eat potato fritters as a side dish and potato croquettes for snacks or appetizers.

Both of potato fritters and croquettes are equally unhealthy because in order to form a nice oval-shaped ball, you have to deep fry the potatoes, mash it, and shape it.  After you shape it into tiny balls, you deep frying it again.  Big no no to your waist line!  You can’t boil the potatoes because it will become too mushy and difficult to form. 

In this recipe I was trying to come up with an idea on how to enjoy this potato fritters and croquettes but make it healthier.  So here’s what I did.

Ingredient:

  • A bag of Ore Ida Mashed Potatoes
  • 2 eggs
  • A pinch of salt and pepper
  • Kobe Savoury Fritter Mix, flour mix available at most Asian grocery stores
  • Bread crumb
  • Olive oil cooking spray

Method:

  1. Heat Ore Ida Mashed Potatoes in microwave per instruction
  2. Mash it while still hot
  3. Mix with eggs, salt, pepper, and the Kobe Savoury Fritter Mix
  4. Shape into tiny balls
  5. Roll onto the bread crumbs
  6. On a baking dish, spread out a sheet of aluminium foil
  7. Spray it with olive oil cooking spray
  8. Put all the balls on the sheet
  9. Spray the balls again evenly with olive oil cooking spray
  10. Bake it at 350 degrees for 20 minutes

Not bad, eh? On the second batch, I wanted to try something different.  Instead of rolling the balls onto bread crumbs, I just scoop it and put it on a greased baking dish.  Spray it again with olive oil cooking spray and bake it at 350 degrees for 20 minutes.  The result:

I have to say I prefer the second one without bread crumbs a bit better.  They both are equally delicious, and by skipping the deep frying steps, you have cut down half of the calories intake. Healthier and Scrumptious at the same time!!
