My philosophy in terms of eating healthy food is eat semi-healthy food or it won’t last long. Make sure you use portion control You will end up having yo yo diet and it’s just not healthy at all. Having said that, I typically prepare about 75% healthy food and 25% “treats” (as I call it). This morning I made omelet for everybody including my son. I actually cut 1/3 of my omelet and gave it to my son. For my omelet I use:
- 1 egg
- 1 cup egg substitute (equal to 1 egg)
- a bunch of spinach, chopped finely
- mushroom (quantity varies by preference)
- shredded cheddar cheese
- pinch of salt and black pepper
- cooking spray in butter flavor
As you can see the ingredient is not the healthiest of all but still 1 egg is better than 2 eggs, and spinach and mushroom are much better than bacon. Hubby and I skipped the sausages but I gave 3 links of turkey sausages to my son. For the desert I cut up some fresh strawberries.
For lunch I made Salmon Burger using:
- Arnold Select 100% whole wheat Sandwich Thins buns
- frozen salmon patties from Costco.
- Lettuce
- Tomatoes
- Cheese
- Spicy Mayonnaise on mine and hubby’s (mix of mayonnaise and hot sauce)
We ate it with grilled zucchini and a handful of Baked Lays chips (use portion control).
It’s ok to add unhealthy food just for a taste as long as you eat balance diet and watch portion control.
