Tonight I made baked Tilapia, steamed Brussels Sprout, and mashed potatoes for dinner. I’m trying to be as practical as I can when it comes to cooking, so I always buy Ore Ida Steam ‘n Mash Mashed Potatoes. The drawback is the portion is too big for the three of us. Since we don’t really eat Western food on a regular basis, most likely the leftover mashed potatoes end up in the garbage disposal. So I decided to make potato pancakes out of the leftover mashed potatoes. I had this really delicious potato pancakes at the work a while ago and been dying to try to make it since then. I looked up the Internet and found a really simple recipe. I don’t like using measurement when cooking (which explain why I don’t bake). Everything depends on how much mashed potatoes you have left and how creamy it is. Make sure you don’t put too much flour as it will become too condense and taste like bread. However if you don’t add enough flour or the mashed potatoes is too creamy, it will fall apart.
Ingredients:
- Leftover mashed potatoes
- 1 beaten egg
- Chopped onion
- All purpose flour
- Salt and pepper
- a handful of cheddar cheese
Mix all the ingredients, spoon it out and fry it in a form of patties on a non-stick skillet. The more oil you put, the crispier it’s going to be. I was trying to make it a bit healthier, so I didn’t put too much oil. On my first trial, it didn’t look good.
