Quick Lunch for Toddler

Weekends are typically my days off of cooking and I’m sure lots of working moms feel the same way.  We work so hard during the week taking care of our job and household that we just want to relax for a change.  This is what I served to my son this past weekend.  I have to admit this is not the best nutritious meal ever, but I love it because my son can easily eat it by himself.  As an Asian family, we eat rice everyday.  I’m talking about lunch, dinner, and sometimes breakfast.  It’s a little harder eating rice with utensil, and I’m a little iffy whenever my son does that.  I’m a super clean and neat person.  So even though I do have a personal cleaner named Cotton, who wags his tail whenever I told him to do his job, it’s still a nerve wracking watching sticky rice spread around the table.  I do, however, try to serve balance diet meal which includes carb, protein, veggies and fruit.  So, this is what I came up with.  A toasted blueberry waffle with sausages, mixed veggies and apples.

    What a cute smiley-faced meal! I’m a big fan of anything my 3 year old will a)willingly consume, and b)feed herself, so this looks perfect, and fun! That smiling waffle would make her day.
